Team Vacherin triumphs at ACE ready steady cook competition!

Team Vacherin have emerged victorious at the highly competitive Association of Catering Excellence (ACE) Ready Steady Cook competition held at The Skylight Peckham. In the hotly contested competition with 11 other competitors contestants had to prepare two dishes for the judges. This year, the first course has to be cooked over open flame using a Big Green Egg.

In classic ‘Ready-Steady-Cook’ tradition, the second course was a ‘mystery basket’ challenge. With an assortment of larder essentials and surplus produce, generously provided by partners at Waste Knot.

We were delighted when after several gruelling hours of fierce competition, our Chefs Ben Garnett-Sinclair and Enrico Fonseca were crowned the winners!

The Winning Menu

MAIN: BBQ Rump of Aged Beef, Fermented Hispi Cabbage, Brown Butter Mash, Onion Ketchup, and 'Gentleman's' Relish

SIDE: Beef Tartare, Egg Yolk, Radish, Tarragon, BBQ Brioche

MYSTERY DISH: (featuring Waste Knot produce): Farro Risotto, BBQ Cavolo Nero, Sprouting Broccoli, Pickled Apple, Spicy Beetroot, and Pea Shoots

This was very much a team effort with Head Chefs, General Managers, and the central Food Team playing pivotal roles in supporting Ben and Rico throughout the event. Thank you to Stephen Humphries, Sam Walton, Alex Rowe, and Steven Lickley who all contributed their expertise and guidance. Well done all, we couldn’t be more proud!
