Baristas Assemble with Good & Proper

Our team took a break from coffee and spent the afternoon exploring the world of tea with one of our trusted partners, Good & Proper.

Founded in 2012 by Emilie Holmes, Good & Proper is driven by a belief in doing tea properly,  with a focus on quality, transparency and sustainability. It’s an approach that mirrors our own commitment to thoughtful sourcing and delivering great experiences through food and drink.

Hosted at Good & Proper’s offices and led by their Tea Educator, Lucy Chappell, the session gave our baristas the chance to deepen their understanding of tea, from where it comes from to how flavour develops and how best to brew it. The focus was practical, hands-on learning that can be brought straight back to our client spaces.

A standout moment was discovering the art of ceremonial matcha. Our baristas tasted Good & Proper’s House Matcha, crafted in Kyoto by respected tea master Hiroshi Kobayashi, before learning the traditional whisking technique - and having a go themselves.

The session wrapped up with a guided tasting of Good & Proper’s Rainforest Alliance Certified core range, including English Breakfast, Brockley Breakfast, Earl Grey, Jade Tips, Lemongrass, Hibiscus and Peppermint. Along the way, our baristas picked up useful tips on water temperature, brew time and how to let each tea show its natural character, building confidence to serve tea with care and attention to detail.
